Pumpkin Ale secret ingredient???

Postby RED » Tue Oct 23, 2007 6:57 am

Does any one have any experience in useing allspice in their ales and more so pumpkin ale?

I was going through different spices rather than the odvious nutmeg, cinn., other herbs for other beers, and then I remembered allspice and its aroma. I took a sniff of what we had and it hit me. I looked a little on pumpkin spice recipes and no all spice. What do you guys think?

i believe allspice should be used in the recipie. afterall, its used in pumpkin pie. i plan on using whole allspice berry in my recipe, along with nutmeg and cinnemon.(whole, ground by me) and if you promise not to tell everyone, a friend of mine let me try his batch that he had added 12oz. of real maple syrup. it was perfect! i'm using an alt recipie as a base for mine also.
i'm exited!!!

Cool. I ground my cinn. but got fresh preground nutmeg and allspice. It tasted great when I went to bottle but I'm going to wait for a richer flavor and weeks before I even think about tasting. Fresh is always best, respect the dedication. :D
