Pear Wine
the pear wine has been "fermenting" fine I hope. There is about 2" of sediment in the bottom of a 1 gallon jug. We racked it through a mesh, but it is still about the same sediment. Any suggestions? It's been in jug about 2 months.

I'll assume you racked to a secondary and now you have 2 inches of gross lees and you racked again through a mesh hoping to eliminate the gross lees.
If the above is pretty much correct you need to rack off of those gross lees. Allow everything to totally settle first then rack slowly only down to the gross lees. You are going to lose that sediment. You don't want it in your wine. You can then top off with water. That will dilute the wine somewhat. If the wine has finished its fermentation and you want to sweeten you can add juice to top off. Same juice you used to make the wine. If you add 1 crushed campden tablet per gallon and 1/2 teaspoon potassium sorbate per gallon you'll sweeten the wine slightly. If you want the wine dry and it is still fermenting when you add the juice it will ferment out.
