Peach Wine Concentrate, pros and cons?

Postby inthefreeworld » Sat Nov 24, 2007 7:16 pm

I wanted to make a batch of peach wine to give away at Christmas and decided to get one of those concentrates to make it with. The reason I'm not using real peaches or some other type of fruit for that matter is because we are moving soon and some of my stuff is packed already. I'm just wondering if anyone has tried using that stuff or if anyone has other suggestions of simple ways to make wine. I've made several batches before and they have all turned out pretty good so I'm not too worried about it.

I made a peach wine a couple of years ago with canned peaches. Used two #10 cans of peaches from Costco. Didn't care that much for peach wine. It was a nice dry wine and friends liked it. I made pear wine the same way and much preferred the pear flavor. wyo wino :P

2 #10 cans pears juiced them through a tomato juicer
2 cups white raisins soaked in water then ran through the same juicer
1 cup orange juice
5 campden tablets
2 1/2 teaspoons pectic enzyme
4 1/2 gallons water
1 cup brown sugar
24 cups white sugar
Acid to bring up to .60%
1 teaspoon yeast nutrient
3 teaspoons yeast energizer
premier cuv'ee yeast
SG was 1.090

I poured the juiced pears, raisins and orange juice through a Home Depot paint strainer bag and tied off at the top and put into the primary. If I made it again I would just put the pears raisins and orange juice through the blender. Some people don't like the fruit whirred up in a blender but I haven't noticed any difference in flavor. When I transfer to the secondary at 1.030 I remove the bag. The pears were S & W brand from Costco in light syrup. If you want fuller body and stronger pear flavor you may want to use 3 cans. wyo wino :P
