Help with Lagering
This is my first time lagering, but I bought a kit for German Oktoberfest, and i"ve make tons of other kinds of beer in the past. I followed the instructions to a T. The OG of my brew was 1.056 which is where the instructions said it should be. I began fermenting according to my directions at the appropriate temperatures ending with about 2 to 6 degrees C. It has been there much longer then my instructions say it should be and I just took a reading today of the specific gravity and it seams like it's stuck. (at about 1.040) I tried to raise the temp a bit but I am not sure i want to do that too much because that defeats the purpose of lagering. To add to my list of facts I started brewing on aug 15th. I placed it into the secondary on aug 19th, and my instructions say it should be ready about now. (3-4 weeks later). I'm trying to attain a 1.103 to 1.016. Side note: when i taste the beer it tastes great, just not enough alcohol.
Today I just took the carboy out of the fridge completely see, if that does anything. Any thoughts or suggestions??

Did you do a dyacetyl rest?
