fortification
I recently bought a green apple reisling kit. I then discovered that it is only about 5% ABV. I know that I should have read the material more thoroughly, but I'd like to raise the ABV to about 12%. What could I use to fortify it and not compromise taste? Vodka? Grain?

It sounds like it is mellow drink like the coolers you can purchase.
I suppose you could add some more sugar and bring up the alchol level.
I don't think people have to always bring up the alcohol level to enjoy a flavor, especially like a cooler.

I did't say I had to, I said I wanted to. The other day I ran across someone else with the same question and the answer was to add honey. Since I have been making mead for two years, I don't know why I didn't think of it myself. They said to make the kit per the instructions but add 6 lb. of honey to the fermenter. Of course, I will mix the honey with the spring water first. I was planning to make two 3 gallon batches anyway, so that I can have the green apple reisling as bought and the higher alcohol version as proposed. Thank you for your response. It made me think.
