First time Cyser
While at the grocery store today, I got inspired to try something I've been thinking about for awhile: Cyser. Here's my recipe, it's too late to change, but I'd love any kind of feedback!
5 lbs, 12oz Honey (local honey found at Smith's...strange)
5 12oz cans frozen apple juice concentrate (Old Orchard brand)
1 lb Sugar to bring SG up
Water to 6 Gal
Premier Cuvee yeast
K-Meta as appropriate
S.G. 1.062
I intend to bottle this with priming sugar to end up with a nice sparkling beverage in 4 months or so.
Let me know your thoughts/suggestions!

I have used Premier Cuvee' by Red Star alot. After you sprinkle Premier Cuvee' step back it ferments fast. Your Cyser will be very dry. Since you force carb you may want to add a little sugar to back sweeten. If you do back sweeten add some campden and potassium sorbate to prevent more fermentation.
I guess I am going to have to break down and buy equipment to force carb my beer. Years ago I had some, what they called apple beer and it was pretty good.

I actually wanted to bottle this one to age. I can do it off the keg, but it's a messy ordeal. I have the "beer Gun" to do it, but wouldn't want to do a whole batch with it.
This brings up our Hard Lemonade quandry, how to sweeten and carbonate....I've got a couple months to think about. I might just bulk age...

My wife still loves the MGD and a couple of tablespoons of frozen lemon or lime ade concentrate. I may just try the sweeta in a wheat beer and use the concentrate.
