BrewerMan Bart,
I am very thankful for you posting of you recipe and am interested in attempting a brew...but first, a few questions:
>With regards to your Hallertauer hops:
->What Alpha Acid % was your stock
->Where they German or US Hallertauer hops?
->Is there anything I need to look out for during the mash-in/sparge (never performed a mash-in with anything but malt and water)
->Can you find Pumpkin Pie Spice in every corner market or do I need to seek out a specialty store...I have Shaws and Price Chopper here in Vermont.
Thanks for your recipe and time!

I think I can help out with the pumpkin pie spice question. You can find a pre-made blend in just about every corner market at this time of year. However, you can also create your own to ensure you are using the freshest ingredients. A basic pumpkin pie spice recipe has 4 parts cinnamon, 2 parts ginger, 1 part nutmeg, & 1 part allspice. I like to throw blade mace and vanilla bean in as well. I get the ingredients from a spice shop such as Savory. Hope that helps, happy brewing!

Re: Dogfish Head Pumpkin Ale Clone Recipe
I have brewed this clone twice now and it is pretty spot on. However I highly recommended adding the hops at 45 minutes. It'll cut down on the bitterness thus making it much smoother. It's amazing how waiting 15 minutes will make such a big difference.
