Crabapple Strawberry Wine
Crabapple Strawberry Wine
37 pounds crabapples
6 pounds strawberries
7 gallons 8 ounces water
42 cups sugar
3 3/8 tsp grape tannins
6 ¼ tsp peptic enzyme
3 tsp yeast nutrient
14 crushed campden tablets
6 table spoons potassium carbonate
Crabapples and strawberries crushed and tied off in a bag in primary. Stirred and allowed to sit for 24 hours.
Added 1 package Lalvin 71B-1122 yeast
The potassium carbonate was required because of the high acid of the crabapples.
The yield from this recipe is approx 6 gallons of wine

that sounds like a good wine worken, any guess what the alc.% might wind up? i just finished a very good cherry wine, it's my first wine since my brewery burned down, it was a concentrate and i followed the directions on the can exactly. me and a bud popped the cork on one the other night and it was very tasty.

We grow our own crab apples but unless it is blended with something else it is pretty sour.
