Chokecherry Port

Chokecherry Port
I have heard that chokecherries make the best port wine. I have only been able to find one recipe for a chokecherry dessert wine which I assume is similar to a port. Does anyone have a chokecherry port recipe that will make 18-23 liters? Thanks

I never cared much for a sweet wine so have never tried any of the sweet wine recipes. However, I did find a choke cherry recipe for dessert wine on Jack kellers site. Last year I made a dry choke cherry wine that turned out very good. It takes about a year for choke cherry wine to start reaching its best flavor.
My understanding of the basic difference in a dessert wine and a port is that they start adding alcohol such as brandy to the fermenting port wine must. When you are adding the alcohol to the port wine it will eventually stop the fermentation. If I were making the port wine I would wait until the later stage of the primary fermentation before adding the alcohol. Adding the alcohol will bring the alcohol level up to about 18 to 20%.
If you go to Jack Keller's web site he has several choke cherry recipes. One is a dessert wine. Hope this helps you out.
